Who doesn't love pound cake?  Heck the trouble I usually have is choosing what kind to have not whether or not to have it in the first place.  Luckily this recipe by Vegan Richa solves that little issue by giving you two kinds wrapped up in one lovely cake!  Note: This recipe calls for vegan cream cheese to get that lovely dense fuggy texture we all love in a pound cake. We recommend Kite Hill plain cream cheese spread because it's all natural and has a more delicate flavor because it's made with cultured almond milk instead of soy.  If you don't have access to this cashew cream works well too.

When I first went vegan if you'd told me I'd eagerly be asking for a bowl of pudding made from mashed up avocados I'd have laughed in your face.  But let me tell you this avocado chocolate mousse is by far the best chocolate pudding I have eaten in my entire life.  And it's easy enough to make for everyday eating!  It's two secret ingredients are raw coconut nectar and raw cacao powder.  Something magical happens when you whip these things into a bowl of ripe avocados and we thank the folks over at The Kitchn for turning us on to it!  Simple, Vegan and RAW!

All too often gluten free versions of traditional desserts are either too fussy to make or they bear very little resemblance to the original thing to be worth the effort.  NOT SO with this apple pie!  I won't lie to you, the crust takes a little more effort to mix up than an ordinary pie crust BUT it is easy to work with once you get it mixed (I totally recommend you use the "finger method" of getting it into the pan.  So easy!)  And if your pie crust is as sadly unflakey as mine is this will be a vast improvement in both texture and flavor.  Our thanks to The Plant Powered Kitchen for coming up one of the most AMAZING gluten free vegan dessert recipes we've tried so far!

Believe it or not I had never had an un-dried fig until I was in my mid 40's!  Didn't even know what one looked like. It's a well known fact that my daughter and I are pumpkin pie fans.  Ok, maybe "fan" is too weak a word.  We LOVE us some pumpkin pie!  So when we were looking for desserts for the holidays and stumbled on this vegan dessert recipe over at the Minimalist Baker we knew we just had to try it.  I won't lie to you, if you make this dessert from scratch it takes a bit of doing.  That said, you can make all the individual components of these parfaits in advance.  If you do that it goes together in a snap.  And you'll have pumpkin butter, granola and yummy candied pecans on hand for other vegan YumYums!

Chia seed pudding has to be one of the happiest discoveries we've made since going vegan.
