A Chewy Vegan Brownie Recipe That No One Will Eat?

Vegan Brownie CollageThe trouble with finding a great chewy vegan brownie recipe is that once you make up a batch they disappear so fast it’s hard to get one for yourself! Well, we have found a sure fire solution for the frazzled brownie baker to guarantee you get to bake your brownies and eat them too!

Let me set the stage for you.

The kid and I were visiting my folks down south for a few weeks. Ok, ok, so we were hiding from the three feet of snow piled up in our own front yard, but that’s beside the point. Anyway, being relatively new vegans and knowing the folks were “skeptical” of our new lifestyle choice we figured we’d bake up a peace offering. What could be safer than brownies? Everyone loves brownies, right?

Vegan Brownies Finished and Sugared BrandedSo we scrounged up a recipe, tweaked it to suit ourselves and wiped up a batch of brownie batter. Now this next part is where you want to pay close attention if you want to keep the brownies for yourself.

Instead of baking our brownies in the age old, approved by god, square pyrex baking dish my mom always used, we had the audacity to bake them in our brand spankin new silicone cupcake cups! Yup, we made cupcake brownies! And to add insult to injury we dusted them with powdered sugar. (Yes it was vegan. We made it ourselves.)

Just look at these brownies. Don’t they look yummy? You’d think they’d VANISH in the blink of an eye. Especially when you consider my dad LOVES brownies.

Let me tell you, neither he nor my mother would even TRY ONE!

Now I get that old folks tend to be set in their ways and all, but sheesh! Talk about passive aggressive silliness. No eggs AND they’re shaped like cupcakes? Can’t possibly be edible, right?

So, to make sure you get to eat the fruits of your baking labors, just bake your brownies in a non-standard shape and tell all the Carnists in range that they contain NO EGGS or BUTTER! And you will get to eat all the brownies yourself!

Anyhoo, I share this story with you so that you will know YOU ARE NOT ALONE if you are dealing with family and friends who just don’t get it. Or who kick up a fuss at you for adopting a cruelty free vegan lifestyle. Don’t let it get to you. Just kick back and smile while you eat ALL the brownies yourself 🙂

Here’s Your Chewy Vegan Brownie Recipe…Vegan Brownies Cooked Brownie in Muffin Cup Branded

1/2 cup (1 stick) non-dairy butter (such as Earth Balance)

3/4 cup granulated beet sugar (all beet sugar is naturally vegan)

2 flax meal eggs

1 tsp vanilla extract

3/4 tsp baking powder

1/4 tsp sea salt

1/2 cup cocoa powder

3/4 cup unbleached all-purpose flour

Heat your oven to 350 degrees F and set your silicone muffin cups out onto your baking sheet. (If you are using regular muffin tins be sure line them with paper cups or grease them generously)

Mix up your flax eggs and let them sit (or rest) for about 5 minutes.

Melt your butter either in a pan on the stove or in the microwave. We use a large microwave safe mixing bowl and melt the butter right in that.

Vegan Brownies Batter & Flour BrandedMix the sugar, flax egg, baking powder, salt and cocoa powder into the melted butter. Wisk or stir vigorously to combine.

Add the flour and stir gently until incorporated. (If you want to add in chopped nuts, chocolate chips etc. fold them in now)

Spoon your batter into your muffin cups. You want them about 3/4 full and will need 8-10 cups.

Bake on the middle rack of your oven for 23-25 minutes. Watch for them to start pulling away from the sides of your muffin cups and for the tops to spring back gently when touched. DO NOT over bake them or they’ll become crumbly.

Remove from the oven and let cool for 5 minutes before popping them out if the silicone cups (or removing them from the muffin tin) to cool completely on a plate.

Dust with powdered sugar and enjoy!

These vegan brownies will stay fresh for a few days if you store them in an air tight container. They also freeze well if you want to make a large batch and keep them on hand for long term snacking.

    ahh I’m sorry, i’m still not a vegan (vegetarian) but actually just becoming one and gathering as much info and recipes as I can, so thank you for this great recipe! I know what it’s like when people think “WHAT DO YOU EAT?” as if meat, milk, and eggs were everything lol thanks again!
