So why do most of us find it so hard to figure out what to eat in the morning? Personally I blame it on MORNINGS themselves... I mean who invented them in the first place? We could figure out what to put into our mouths if the day just started at a reasonable hour, couldn't we? LOL
But seriously, these breakfast ideas are deliciously vegan and oh so good for you. In our house we think Donkey says it best... "In the mornin we'll make... WAFFLES!" Just like Donkey we are waffle girls and we never turn down an opportunity to test out a new recipe. When we found this recipe over on our idol Isa's blog The Post Punk Kitchen we knew we just had to give them a try. And guess what? We've discovered that we know that magical place where blueberries are always in season...
Oh, by the way, if you are less than happy with your current waffle maker you might like to check this one out. We love how it flips over so the batter gets crispy on both sides. And for once when they say your waffles won't stick, they mean it. BONUS it stores in the vertical position so it takes up WAY less room on the counter or in your cupboard. Anyway, we like it.

Guys you have just got to try this. For me it is a blast from the past with a twist because Cream of Wheat was one of those things my mom used to make for us all the time. As an adult I shied away from it because well, even in my pre-vegan days I knew there was really no nutritional value in the stuff. But now that they've come out with Whole Grain Cream of Wheat I've come to love it all over again.
I can honestly say I never would have thought to dress it up the way our friends over at The Flaming Vegan did but WOW is it YUMMY! The secret is in the rosewater! And if you are thinking what I think you're thinking... STOP! Do not diss this dish before you try it! On second thought, go right ahead... more for me 🙂
When I made the decision to shit to a Nutritarian vegan lifestyle the search began for more interesting ways to incorporate beans into my diet. Turns out we Americans and our obsession with sweets and wheat/grain for breakfast is really odd. I mean this bean dish or some variation of it is more or less the national breakfast food of Egypt! So I thought "what the heck" (only I didn't say heck LOL) let's give it a try. Guess what, it's savory, filling and delicious. I really want to thank the folks over at Herbivoracious for turning me onto what has got to be my new fave breakfast (anytime) meal.
If you are a new vegan you may not realize that tofu has a very "eggy" texture and very little flavor. This makes it an excellent substitute for "scrambled eggs" if you are into that sort of thing. We like them occasionally but have never been big fans ourselves. But I'm telling you this recipe we found on Bon Appetit may just change all that. It's just so full of good stuff that we had to include it here. We hope you enjoy trying it and we'll let you know if we become converts 🙂
The next of our vegan breakfast ideas is super simple but will leave you thinking "Why didn't I think of that?" At least that's how I felt when I saw the "recipe" over at Serious Eats. As you probably already know, neither the kid or I are raw onion fans so we just left that off and added some fresh cilantro and salsa. Heck, you could even give it a little sprinkle of cayenne pepper or add a few sliced jalapenos... See, the ideas here just keep flowing.

As far as vegan breakfast ideas go a "breakfast sandwich" is about as classic as it gets. The possibilities are truly endless with these little babies. Use english muffins as in this recipe from the LunchBoxBunch or mini peta breads work well too.
We like to make breakfast sandwiches like these in advance and freeze them in individual sandwich bags. That way they are really "grab and go" food when we NEED to get out the door! They can either defrost on the dashboard of the car or get popped into the microwave for a minute while the coffee is brewing. Just remember to write on the baggies what kind of sandwich it is or you may find yourself eating some insane creation your hubby or daughter dreamed up!
