When we were first trying out vegan dishes my mother wouldn't eat the cornbread I baked using flax meal because that was just stuff was just "gross". So when we baked our first vegan chocolate cake, we just failed to mention to her that the eggs came from flax seeds instead of a chickens rear end. Not only did she eat plenty of that cake, she proclaimed it to be one of the best she'd had in years!

No collection of vegan cake recipes would be complete without a nod to the traditional birthday cake. And we thought why not go all the way with it and find a pure white, vanilla cake. And let's face it, if you master this cake you can dress it up, down or sideways to make a great variety of different deserts with this one recipe.

This may shock a lot of you who know what a "cake freak" I am, but I have never been a huge fan of Red Velvet Cake before. So when my daughter selected this cake for us to try out for this post I was less than enthusiastic. But I have to honestly say this is a delicious cake and it was easy to make too. Camilla over at Power Hungry really knows her stuff. It's light, moist and chocolaty. A beautiful and delicious cake.

One of my favorite deserts from my childhood was my grandma's applesauce cake! So this vegan version had a lot to live up to. Honestly, I was skeptical that ANY cake (vegan or otherwise) could possibly live up. Well, let me tell you Tia the miracle worker over at Tia's Kitchen must have gotten lessons from my Grandma because This IS My Grandma's Applesauce Cake! I kind you not, it tastes just like it. Nuff said... try it!
This cheesecake looks scary and intimidating (and BEAUTIFUL) but in reality is quiet easy to make. There are a lot of ingredients but is made in three stages, each of which are quite simple in and of themselves. We always leave our cheesecake in the pie pan we make it in so didn't mess around with a springform pan this time. BUT it is so pretty sitting on that plate I think next time we are taking a dessert somewhere we'll make this and plate it. This cake is a little bit heavy, almost a bar rather than a cake. At least ours turned out that way. It is so full of flavor it needs no icing at all though it's hard to go wrong with a dusting of home made powdered sugar. We added this to ours more for looks than flavor and found it yummy.
