Vegan Lasagna Recipe Ideas: Beautiful, Ethical & Delicious!

Looking for a vegan lasagna recipe? Maybe you've need one for picky eaters or a gluten free vegan lasagna for your next potluck?  Perhaps you want a faster option than assembling a full size lasagna.  No matter what kind you are looking for there's no need to worry, we've got a lasagna for that!  So kick back with a cup'a Joe and peruse the deliciousness that is Vegan Lasagna.

Note: We'd like to point out to our newer cooks that lasagna freezes really well.  So, don't worry about leftovers.  In fact, if you are a newish vegan this is a really good dish to make up once a month or so and freeze into single serving portions for fast meals later on.​

Vegan Lasagna With Lemon-Basil Cashew Cheeze

Livvy over at 86Lemons pumps out some AWESOME plant powered recipes and this one for lasagna is an excellent example of the fresh take she brings to vegan food.  The notion to use "lemon basil cashew cheese" just blows me away and the way she stir-fry's all the veggies in together makes assembly a snap!  Let's face it anything that makes putting a lasagna together easier is more than welcome.  In any case we can't wait to give this a try.  If you get to it before we do please drop us a line in the comments and tell us all about it 🙂

Vegan “Ricotta” Lasagne

Don't know about ya'll but before we were vegan, ricotta was a must have in our lasagna.  Now, we've had some really tasty vegan lasagna but somehow it's never quite the same.  Honestly, I think it's a texture thing.  But thanks to our Twitter friend Lindsay and her blog The Leicester Vegan the problem is solved.  She has made the perfect "Ricotta" lasagna.  The texture is right and the taste is almost the same.  

Now something ya'll know about is is we like things SPICY so next time we make this we plan to add a teaspoon or two of "spaghetti spice mix" to the ricotta mixture.  We'll test it out on my NOT VEGAN mom and let you know if she notices it's not really cheese! 

Vegan Veggie Lasagna For 2

In our opinion there's no such thing as too much lasagna.  That being said we figure there are probably times you might not want or have all the stuff to make a normal size lasagna.  Luckily when that's the case you have Vegan Risha to the rescue.  This little vegan lasagna recipe is as delicious as it is cute and cooks up in about half the time as a regular sized one.  And if you still have leftovers with this half sized lasagna remember that the leftovers will freeze just as well as it's full size brothers.

Gluten Free Vegan Lasagna

I guess we're not as creative as we'd like to think we are because if you'd asked us if you could make a gluten free vegan lasagna we'd have told you it just wasn't possible.  But that was before we saw this one that the awesome folks over at bon appetite whipped up!  OMG how beautiful is that?  Simple ingredients prepared with love = Awesome Food!

Eggplant Lasagna Roll Ups (Gluten Free)

Do the kids in your home (and I use the word "kids" loosely here) argue over who's slice of lasagna is bigger?  Dana the miracle worker over at the Minimalist Baker has the answer. Make vegan lasagna rollups instead!  This way each serving is pretty much the same as every other serving.  And because this recipe uses eggplant instead of traditional lasagna noodles it's gluten free too!  Tasty, beautiful, ethical and nutritious! What more could you ask for from a vegan meal?

A "Lasagna Lugger" Anyone?

We must be behind the times because we'd never heard of these "lasagna luggers".  But while doing the research for this post we stumbled across them over on Amazon and just had to share!  These things are a GREAT idea and are incredibly useful for so much more than lasagna.  Since we were adding them here we figured we'd share a selection of useful lasagna pans too.  Let us know what you think 🙂

    I can’t wait to cook these! I love lasagna – my family are a bit more on the fence, so this gives me plenty of options to try!

      We feel your pain. There are no other vegans in our family either (and that includes the HUGE extended family from my daughter’s fathers side!) and yet when we bring vegan lasagna to a gathering everyone gobbles it up!
