Hey y'all! I'm Becky Striepe from GlueAndGlitter.com, and I'm delighted to share my vegan story with you! A big part of my vegan journey was health-related, but at the end of the day, I'm vegan for the animals. The health improvements I've seen from going vegan are just fringe benefits that came from following my heart.
I've been vegetarian and pescatarian on and off since I was in my teens. Back in the 90s, when I first went vegetarian, eating veg was not easy. Servers in restaurants insisted that chicken stock was vegetarian, for example. People just didn't know what vegetarian was (let alone vegan), and veggie options were rare.
Cut to almost a decade later. I was 25, and my cholesterol was through the roof. I was pescatarian with a self-described "cheese problem." My doctor wanted to put me on statins for the rest of my life, which seemed crazy to me. I was riding my bike around 10 miles a day, working out at the gym, and should have been in great health.
I asked the doctor for some time to change my diet and cut eggs and dairy out the same day. Three months later, I went in for a recheck. My cholesterol was at a healthy level, and my triglycerides had dropped, too. The doctor was thrilled, and I haven't looked back since. My cholesterol is within a normal range to this day, no meds needed.
Unlike a lot of vegans, I cut out fish and shellfish last. This was a 100% ethical decision. You can only read so much about the fishing industry before deciding that you don't want any part in that equation.
I've been vegan ever since. In the 11 years since I first went vegan, it's been amazing to see how far vegan food has come. Quitting cheese was harder for me than quitting smoking, and it blows my mind that someone going vegan now doesn't have to really deal with issues like that. Really, there's nothing that you can't substitute with a plant-based alternative.
